This is a quick and easy recipe is for energy bites. These little balls of tastiness are super easy to make and only require a few ingredients. This is a no-bake recipe, which makes it easier if you’re in a rush. All you need is:

  • 1-cup of old-fashioned (dry) oats
  • 2/3 cup of shredded coconut
  • 1/2 cup of peanut butter
  • 1/3 cup of honey

I then put all of these ingredients into a mixing bowl, and stir it all together. Once I have mixed everything together, I let the bowl sit in the fridge for 10-15 minutes to make the mix a bit harder so that they are easier to roll into balls. Once the 10-15 minutes is up, grab the bowl from the fridge and starting rolling the mix into little balls. I normally roll the mix into about 1-inch balls, but you can roll them into whatever size you want. After all of the mix is rolled up, they are good to go! I store mine in the fridge afterwards so that they are slightly chilled when I take them out. This also keeps them hard, as the peanut butter melts a bit and makes for a sloppy snack if you leave them out at room temperature.

This is a pretty healthy recipe, but if you want to be even healthier you can use natural peanut butter, as I normally just use regular crunchy or smooth peanut butter. You can also swap the honey for agave syrup if you want a bit of a change from just regular honey. If you want to add extra ingredients to make this recipe even tastier, you can add chocolate chips, butterscotch chips, flax seeds, and any other ingredient you can think of to add a little bit extra!
